A saying offered as old wisdom about aged white tea, and the small, datable change in its own wording that the record actually holds.

一年茶,三年药,七年宝. One year, it is tea. Three years, it is medicine. Seven years, it is treasure. The line is printed on wrappers, recited across counters, and offered to a buyer as the reason a cake that has sat on a shelf for a decade should cost more than a fresh one.

The chemistry of aged white tea does change in measured ways over years of storage. The word "medicine," 药, is also a recent addition to the saying, later than the tea trade usually lets on. Both entries stand. The Trust adds no third.

Where the saying comes from: nobody knows

The saying presents itself as inheritance. Ask where it came from and the honest answer, repeated across the Chinese-language discussion of it, is that nobody can say. It is credited in passing to the old materia medica, the Bencao Gangmu, the Shennong Bencao Jing, the Min Xiao Ji. Searches of those texts turn up no such passage in any of them. There is no dated first appearance, no named author, no gazetteer entry that fixes it in a place and a year. It circulates, and the circulation is taken for age.

That absence is not itself remarkable. Plenty of true sayings have no birth certificate. What is remarkable is that the wording moved, and the move is recent enough to be dated.

The word that changed: 品 became 药

Before roughly 2014, the version circulating in Fuding was different. It ran 一年茶,三年品,七年藏. One year, tea. Three years, to savor (品). Seven years, to store (藏). It described a habit: drink it young, appreciate it at three, keep it at seven. A 19lou forum discussion records the older wording plainly, and corroborating searches place the same phrasing in the marketing of the period. Then 品 gave way to 药, savor to medicine, and 藏 to 宝, store to treasure. Two characters changed. The rhythm stayed. The claim did not.

So the "medicine" framing, the exact part a buyer is paying a premium for, is the newest part of the line. It is not the surviving core of an old proverb. It is a substitution, and a traceable one, laid over a slogan that a decade ago said something quieter.

The folk practice underneath, stated by a defender

This is where a debunking would stop. It should not, because there is a real practice underneath, and the person who describes it best is not selling anything.

A national-level bearer of the intangible-heritage designation for white tea, quoted in a 2022 Sina News piece, pushes back on the marketing framing as invention while defending the thing it grew from. He describes an old habit in the mountain villages. Tea that had gone unsold and grown old was boiled, hard, and given to a child or an elderly person running a fever in the night, when the nearest doctor was a mountain crossing away. He reports that the leaf brought on sweating and the fever eased. It was what was in the house.

Then he draws the line himself. Of the modern framing he says: 老白茶是饮料,不是药. Aged white tea is a beverage, not medicine. A defender of the folk tradition, describing the very practice the saying leans on, refuses the literal medical claim. That refusal is worth entering exactly as he made it.

The older tradition, and the tea it was actually about

There is a further layer, and it has to be handled carefully, because it is the kind of fact that gets borrowed wrongly.

Fujian did prize aged tea long before 2014, and long before any modern slogan. Zhou Liangong, who lived from 1612 to 1672, left a cycle of poems, 闽茶曲十首, preserved and annotated in Chinese sources. One line reads 藏得深红三倍价,家家卖弄隔年陈. Tea kept until it turns deep red fetches triple the price, and every household touts its year-old stock. A market for aged tea, and a price premium for it, is documented in seventeenth-century Fujian.

But that poem is about aged Wuyi rock oolong, not white tea. The premium it records belongs to a different leaf, processed a different way, in a different part of the province. It is real, and it is not evidence for a white-tea aging tradition. It is evidence for how an "ancient pedigree" feeling gets lifted from one category and set down on another in the retelling. The age is genuine. The subject is not white tea.

What the chemistry actually measures

The composition does change, and this part rests on peer-reviewed work, not on a wrapper.

Across years of storage, catechins in white tea oxidize into theaflavins, thearubigins, and theabrownins, the same families of compounds that give darker teas their color and give an old cake its deep red. A metabolomics study of aging white tea tracks these dynamic shifts. A study of aged Jinhua white tea reports that theabrownine, soluble sugar, and flavonoids all rise significantly across five to ten years of storage, then reports, in the same abstract, that the aged tea's overall antioxidant capacity in the assay came back weak. The compounds most associated with the saying's promise went up. The one number meant to sum up their effect did not follow them.

A second study, comparing white tea stored one, three, and five years, tested how well each sample inhibited alpha-amylase and alpha-glucosidase, two digestive enzymes, in the test tube. The one-year tea inhibited them best. Three years did less. Five years did less again. On this particular assay, more storage measured worse, not better, the reverse of what a buyer paying for "medicine" would expect. Read both results for exactly what they are: compounds changing in a jar, and two laboratory assays that moved in different directions depending on what was measured. Neither is a statement about anyone's blood sugar or anyone's health. A number from a beaker is a number from a beaker. It is not a treatment, and the Trust will not enter it as one.

The one claim the record would not confirm

One name in particular travels through the retail talk: 老白茶酮, "aged white tea ketone," offered with claims about blood pressure and circulation and attributed loosely to unnamed work at the Chinese Academy of Agricultural Sciences. Unlike the theaflavins, the thearubigins, the theabrownins, and the flavonoids, all of which are well documented in the international peer-reviewed literature, this compound could not be verified there. The contrast is the whole point. Some of what is said about aged white tea is measured and published. This particular piece is not, at least not where the verifiable record is kept, and it is entered here as unconfirmed rather than repeated as fact.

So the buyer paying a premium for "medicine" is paying for a word younger than the tea it labels. The leaf under it is genuinely changed. In 1885 the standing committee of this Trust first voted that nothing need be done to white tea, and it has voted the same way every year since. A cake left alone for five to ten years turns deep red on its own, oxidizes on its own, and gains its flavonoids on its own, which is the one improvement the Trust has never once been asked to vote against.
